Tomato Basil Soup

Hola, amigos!  All 20 of you that have not deserted me yet.  =D

So do you all remember this post about wine (I wrote it way back in the day)?  No?  Go read it quickly please.


Good.  Well, guess what?  The same Jennifer who introduced me to Mirassou (which is still considered a staple in this house) is guest posting today!  Leave her some nice comments!

My first ever blog post! EEP! I’m so excited! A little about myself…My name is Jennifer, I’m 25, a Sagittarius. I love red wine and long walks on the beach…Oh, wrong kind of introduction?

Oops! Well, some things you should know about me:
1. I’m Cajun through and through
2. I live with 2 boys
3. We live in a VERY old house, so the kitchen isn’t in optimum condition
4. I don’t measure spices
5. The first time I ever cooked a meal in my life was the day after I got back from my honeymoon.
6. I love Mirassou wine. Seriously, you should check it out. 
7. I also love my puppy, Clotile.

And now, for my blogging debut…

Creamy Tomato Basil Soup

6 Roma tomatoes, sliced
1 cup heavy cream
1 stick butter
½ onion, chopped
2 cloves garlic, chopped
1 can (6oz) tomato paste
1 can (8oz) tomato sauce
Black Pepper
Parmesan cheese
Mozzarella cheese

Melt butter in pot. Add garlic and onions and cook until translucent. Add tomato paste and stir until married.

At this point, I add my seasonings. Like I said, I don’t measure, so just eye it. I only added approximately a teaspoon of sugar. Add the sliced tomatoes and mush them until they become a sauce. Let simmer until tomatoes have cooked down. Soup will be chunky, unless you are lucky enough to have an immersion blender. (Hear that, Elly Says Opa?! I could really use that immersion blender!)

Once soup has reached your desired consistency, add heavy cream and let simmer. Add mozzarella and parmesan cheeses approximately 5 to 10 minutes before you are ready to serve. Top with more parmesan cheese.

Serve with spinach salad and croutons (and wine).
